Instead of grapefruit, the citrus star of this version is the kumquat, a delicious little orange that grows abundantly in Sonora. (If you can’t get your hands on kumquat jam, replace it with orange marmalade and orange slices to garnish).
A more subtle recipe than the classic Paloma, this version really allows the quality and character of Kilinga to shine through.
