OUR TECHNIQUE

Kilinga Bacanora is made
with care in Álamos, Sonora.
We practice safe, sustainable, and environmentally-friendly farming, nurturing our agave at each step of production.
First, we fire-heat our volcanic stone ovens, stoking the flames with mesquite from our fields. Once the ovens reach peak temperature, we turn them off and put the agave in.
We then seal our ovens and cook the agave for four days. After the agave is perfectly roasted, we quarter and grind it in our stone mill.
We ferment the agave pulp with the highest-quality water and cultured yeast, transforming it to Bacanora.
Finally, our Bacanora is double-distilled for crystalline purity. In keeping with tradition, we allow the Bacanora to rest until we are satisfied that it’s perfect.
Each bottle of Kilinga Bacanora is authored and numbered: a singular creation for you to savor.

Bacanora Silvestre
Agave Angustifolia Haw, Wild 7-8 Years. Young, green agave plants give Silvestre the lightness of a springtime bouquet.
In sight: crystalline.
In smell: subtle floral and herbal notes.
In taste: wildflowers, citrus, and the tartness of a green apple pie, with a gentle violet finish that does not linger on the palate.

Bacanora Blanco
Agave Angustifolia Haw, 10-12 Years. Mature agave plants imbue Blanco with the rich sweetness of an autumn campfire.
In sight: crystalline, perceptible legs.
In smell: aromatic smoky, sweet, and earthy notes.
In taste: bold toasted caramel and minerals that linger on the palate without overpowering.

Bacanora Reposado
Agave Angustifolia Haw, aged in White American Oak Barrels from 6 to 10 months.
In sight: Gold Honey color.
In smell: Wild flowers, vanilla, roasted coffee and hints of caramel.
In taste: Hints of vanilla and agave followed by smooth, clean, woodsy finish that lingers.

Bacanora Añejo
Agave Angustifolia Haw aged in French Oak barrels from 34 to 36 months.
In sight: Deep Amber color.
In smell: Sweet earthy nose with delightful hints of dark chocolate, tobacco, vanilla and charred sugar flavors present.
In taste: Toasted Caramel.
