A quiote is what an agave shoots as it is reaching the end of its life and it looks to reproduce.

We leave a percentage of our agave to shoot and flower to feed the bats that migrate though the land, and importantly pollinate our agave to give us the seeds we need to grow more agave! And of course produce more delicious Kilinga Bacanora.
