PALOMITA

Light and dry with just a hint of smoke, Kilinga Bacanora Blanco is perfect for this little twist on the most refreshing and famous of Mexico’s cocktails, the Paloma.

Instead of grapefruit, the citrus star of this version is the kumquat, a delicious little orange that grows abundantly in Sonora. (If you can’t get your hands on kumquat jam, replace it with orange marmalade and orange slices to garnish).

INGREDIENTS

2 parts 2 oz Kilinga Bacanora Blanco
1/2 part 1/2 oz Fresh Lime Juice
3/4 part 3/4 oz Kumquat Jam / Marmalade
Small pinch Sea Salt
3 parts 3 oz Sparkling Water
Glass
Highball
Process
Shake
Ice
Cubed to Shake, Cubed to Serve
Garnish
1 Sliced Kumquat

HOW TO MAKE IT

  1. Add all ingredients, except for sparkling water, to a cocktail shaker
  2. Use a spoon to dissolve the kumquat jam & salt into the Bacanora and lime juice
  3. Fill shaker with cubed ice and shake hard
  4. Fine strain into highball glass
  5. Add sparkling water
  6. Fill glass with cubed ice
  7. Add sliced kumquat on top to garnish and serve
