SPRING IN SONORA

Bright, refreshing and very easy to enjoy. This flavor combination has many different origin stories, from Japan to London and onto Sonora. However, this is essentially a twist on the Daiquiri. With the added green flavors of apple and thyme, the mouthfeel of pear and a savoury hint of salinity. This is a great way to show off the versatility and joy of mixing with Kilinga Silvestre.

INGREDIENTS

1 parts 1 oz Kilinga Bacanora Silvestre
1 wedge 20 grams Pear
1 Small Pinch Sea Salt
1/2 part 1/2 oz Fresh Lime Juice
1/2 part 1/2 oz Rich Simple Syrup
1 Sprig Fresh Thyme
Glass
Lowball
Process
Shake
Ice
Cubed to Shake, None to Serve
Garnish
Sprig of Thyme

HOW TO MAKE IT

  1. Add pear and salt to a shaker and crush into a pureé
  2. Add all other ingredients then fill shaker with cubed ice
  3. Shake hard and fine strain into a coupette or cocktail glass
  4. Take a fresh sprig of thyme and tap it against your hand to release its aromatics before floating on the surface of the drink and serve
